Sometimes I get as fed up reading health articles as I do writing them, but write them I must! Why? Well, because someone has to take on the huge task of putting out and repeating the message that if we don’t take good care of ourselves we’ll most likely get sick when we shouldn’t get sick. We’ll also end up fat when we should be slim, and perhaps become depressed when we should be happy and content! A lot of mental, physical, and spiritual wellbeing is within our control, but the way that so many off us stress out and pig out these days, it’s little wonder we’re a nation growing up with that silent of killers, High Blood Pressure!
I mean let’s face it! The eating habits that most of us have are appalling to say the least. Oh, we can lay to rest the term ‘junk food’ in favor for ‘convenience food’, but I think we all know what’s good and what’s not. It’s the ‘convenience’ that has so many of us stocking up with frozen boxes full of meals that drastically lack in vitamins, minerals, or anything that’s of real nutritional value to the human body.
How many of you have considered high blood pressure, heart disease, and your cholesterol levels? I wonder how many of you answer that with an ‘I do’? If you’re one of those that don’t, then I seriously suggest you do some research and re-evaluating.
I couldn’t believe it when I read a recent study which said the average American consumes fast food meals twice a day. TWICE A DAY! Can you believe that? Are you one of them? Just take a minute out here and reflect on your daily or weekly meals. Maybe you are just asking for high blood pressure, or perhaps you’re so sick and tired with life in general, that you don’t care what happens to you, although I doubt this is the case if you’re reading this article.
What writers like me try to do is install in the minds of the reader a ‘healthy fear’ in order to plant a seed which may start you thinking about making certain changes in your lifestyle. Call it mental obsessions or physical cravings, but eating all the wrong foods and slouching around in armchairs are nothing more than bad habits. A habit is simply an acquired behavior pattern regularly followed until it has become almost involuntary. But the good news is that habits can be broken so long as you find something to replace them with.
One of the problems with obesity and out-of-shape people is that these things don’t actually kill us! Well they do, but not directly. Our death certificates will read something like ‘Stroke induced by High Blood pressure’ or heart attack/disease, multiple organ failure and the like. No one has ‘died of fat’ or ‘Passed away due to Idleness’ etc. Just as a chain smoker may die of lung cancer, but it’s really the smoking that caused it in the first place.
So common folks get some love back into your lives and start to take care of yourselves before it’s too late. Ain’t none of us getting any younger you know, and the ole body can only take so much. Find a new way to eat healthily and get some regular exercise. If you stick with it, great times will follow and you will know a new freedom and a new happiness like you never thought possible. But it can only work if you work it so work it you’re worth it.
Ingredients Required to Make the Pulled Pork Sandwiches

The pulled pork sandwiches are perfect as winter meals that are warm and spicy. Usually this category consists of buns instead of the bread that normally constitute the sandwich. Many people due to its flavor and the different textures of its preparation love the pulled pork. These sandwiches have a contrast between the crispy exterior and the tender melting portion inside. Mostly meat from the pigs shoulder is used which has good amount of fat that renders out during the long cooking.
A pulled pork sandwich should be messy, that makes it perfectly summer by the pool food at home. The preparation time is just 5 minutes where as the seasoning takes about one hour. With the below recipe 6 to 8 serves can be done.
The cooking time takes about 5 ½ hour. Following are the ingredients required for the pulled pork sandwiches.
* 1/4 cup dark brown sugar that is lightly packed
* 2 tbsp kosher or coarse salt
* 2 tbsp paprika
* 1 tbsp ground black pepper
* 1/2 tbsp ground coriander and dry mustard that is found in spice section
* 1/2 tsp onion powder
* 1 boneless pork butt which weighs about 3 pounds
* 1 1/2 cups apple juice
* 1/2 cup water
* 1 package plain soft white rolls or other bread
One can also consider bone-in or bone-less pork butts. Both of have them have their equal benefits. Cooking the bone-in pork will contribute some flavor, which also helps in cooking time slightly. Else, the bone can also be removed to get the flavor deep inside the meat.
Mix brown sugar and dry spices together in a small bowl. Rub this to all over the pork, cover it and place it in the refrigerator for an hour. Preheat the oven to 300 degrees and lay pork on the rack, which is fitted inside the roasting pan. Pour in water and apple juice and tightly cover the pan with foil, and slow down the roast for 5 hours. After this, remove the foil and cook for another 30 minutes. It should be cooked until the pork becomes brown from outside and meat becomes very tender.
Remove the pork from the oven, transfer to large platter and allow meat to rest for about 10 minutes. While the pork is still warm, shred the pork into very small pieces using fingers or forks. When the pork is ready for serving, cover it and refrigerate for up to 2 days. When it is required to reheat then put it in shallow baking dish and place it in 350-degree oven for 15 minutes.
For making pulled pork sandwiches, it is necessary that the pork be shredded well enough into pieces that are easy to eat. Then the bun should be the typical white buns, which are very cheap. The cole slaw is a portable salad stuff that is served in little polystyrene containers with chicken. The pulled pork sandwiches are topped with chopped cabbage. The other toppings are the mayonnaise, vinegar, and pepper which can change the flavor to some extent.

..it is the wild nature that has shared this territory with mankind for thousands of years.
There are several habitats included in the Natura 2000 Network, such as the Special Protection Area (SPA) of Moura/Barrancos and Mourao home of birds of prey, black storks and cranes; the SPA of Castro Verde, that has the only zonal plan of the country and is a sanctuary for the steppe birds; or yet the SPA of Guadiana which includes the Natural Park of the Guadiana Valley, where the famous waterfalll of Pulo do Lobo is located.
It is the reflex of history!
In this area we have evidence of human presence since remote times: archaeological sites, castles, churches, old mines, museums where pastime artifacts are on exhibition, or simply small hamlets and villages with their traditional buildings show the various cultural influence this region underwent throughout time.
It is the people who live here, with their knowledge and experience, with their traditions and culture. The religious and popular feasts are scattered throughout the whole region: all the villages are embellished to celebrate their patron saints, especially in summer.
The fairs and markets, former occasions for meetings and trade, are today modernized to be a show of the local products and activities; the Cante (traditional polyphonic singing) is also a pretext for meetings and festivals in all the places with tradition in this art.

The gastronomy is one of the region’s best visiting cards. The cheeses are of goat and sheep’s milk, and the most famous is the one from Serpa; the smoked hams and sausages, especially from Barrancos, are prepared from black pig. The local wheat bread together with herbs as coriander, pennyroyal or mint is the base for several delicious dishes such as the “migas”, “acordas” and “ensopados”. Some of the choice dishes are “gaspacho”, “ensopado de borrego” (Lamb stew), “carne do alguidar”, “sopa da panela”, “sopa de Beldroegas”, “sopa de cacao” and “acorda de bacalhau”; but there are also the stewed broad beans, peas with eggs, chick peas stew or game dishes.
Sweetmeats are also a must and they reach their peak with the old convent recipes such as “pao de rala” or “trouxas de ovos”, but popular cakes like the “popias”, “nogados” or “pasteis de grao” are also a temptation.
The wines from Vidigueira, Moura and Pias have tradition but outside these areas new vineyards are growing and new wines are being created.
And because we’re talking about landscape and food, we cannot forget the olive oil one of the best known regional products, particularly the one from Moura.
However, not everything is landscape and there is a lot to do in this Region: open air activities like hunting, fishing, birdwatching, cycling, horse riding, canoing, paragliding, karting, and also cultural activities from the annual calendar of events such as the Planicie Mediterranica, Encontros de Comunidades Mineiras (Meeting of Mining Communities), the cartoon exhibition, the Islamic Festival or the International Documentary Film Seminar Doc’s Kingdom.

Gastronomic Prague

When I was a child, my family were friends with an elderly lady who used to clean the large complex where we used to rent a flat. Mrs Mac, as we were accustomed to calling her was a grand old lady and was from an era long gone; when she had cleaned, not only was everything immaculate, but all the wooden fittings shone and smelled of that real beeswax polish that was de rigeur in days past.
I fondly recall her now; because it was she that first sparked my interest in all things gastronomic. One day, way back, she gave me an old, worn and slightly tattered original edition of ‘Mrs Beeton’s Cookbook’; that old classic compendium on how a proper Victorian household should be run. The book amongst other things contained various over the top recipes with such ingredients as 10 Quail, 5 Partridges, whole suckling Pigs, 3 pints of cream and several Rabbits (complete with instructions on how to skin them). I instantly fell in love with that type of flamboyant cooking and that is what first led me to Prague.
An oblique reference had led me to investigate Czech cooking and I found a similar gastronomic ethos there, as I had found in my beloved book by Mrs Beeton; I resolved to experience this larger than life gastronomic fare and take a City Break to Prague.
My city break in Prague started in a typical Czech tavern not far from the City’s Old Square; I had, of course, checked into my hotel and then briefly explored the magnificent Old Square itself, but now I was hungry and eager to get started. The Tavern had been recommended by my hotel staff and I eagerly awaited my meal. First the soup arrived – Sauerkraut soup, containing sauerkraut, potatoes, caraway, salt, pepper and a good quantity of single cream…heavenly.
I don’t know about being on a city break in Prague, but I thought that I was on a city break to heaven…the Czech’s really knew how to live…and this was only the first course! Next came the main course. Of course, I selected a Czech speciality; dumplings with ‘Spanish Birds’. ‘Spanish Birds’ are actually thin pieces of beef rolled to enclose a savoury filling; which as far as I could see, contained eggs, gherkin, and many more ingredients that I couldn’t make out. The whole dish was, of course, served with a rich sauce containing a more than generous amount of fresh single cream.
Once again the city break in Prague / city break in heaven dichotomy presented itself, but recovering long enough to order pudding, I once again found myself in Prague. I ordered a Czech favourite; apple strudel with drizzled cream and the Czech national beverage to round off…Czech beer.
Now, if this little taster (forgive the pun) has left you wanting to experience some of the same; get yourself onto a city break to Prague and get sampling. Creative Kitchen Combines Traditional Styling and Modern Convenience

Relenda and Larry Blair were determined to create a kitchen that would give them the space and convenience they lacked in their old 60s style confined space. Faced with the design challenge of creating an updated look that would successfully combine modern essentials and their traditional tastes, they turned to Universal Remodeling’s experienced design team.
Working in concert with Universal’s Project Manager Yani, they achieved a unique space and creative blending of styles.
“I wanted a kitchen that was classy but homey and opened the entire space to an easy flow,” Relenda says. “The finishing work looks very high end and custom-made. I can barely tell where the seams are.”
The Blairs’ old 60ish space was updated with traditional maple cabinets deepened and richened with a coffee glaze.
“Henry did a wonderful job, we couldn’t have asked for more. The cabinets are beautiful,” Relenda notes.
The Windsor style cabinets fit with the more traditional furnishings in the Blair home, and yet the space has a clean modern feeling that updates the entire home.
New granite countertops in varying tones of brown lend warmth and compliment the cupboard’s coffee glaze. Finished off with rose toned metal handles, it was exactly the look Relenda sought.
“We searched and when we saw these handles we knew they were just perfect,” she adds.
Tumbled travertine with rich quartz accents dress the backsplash and create an interesting dynamic of textures. A slate earth tone hued floor compliments the space. Area rugs add color and additional warmth while stainless steel appliances give a modern feeling to traditional styling.
Relenda says she is so happy with the way the new kitchen layout creates an easy flow from one room into another. Once confined while cooking, the open design creates a space that moves freely combining the living areas of the home.
“It seems so much larger and more open now,” Relenda says. “The whole area looks complete and unified. Extending the floor into the laundry room and adding designer touches like French doors is a complete and unified look.”
Small touches like a built-in microwave and the new Kitchen Aid oven that features three ways of cooking, convection, auto conversion or full convection have made cooking so much easier and fun. An added pantry eliminates overcrowding and allows easier access.
“Before everything was always filled to the brim and overflowing; now it’s so roomy and there’s a place for everything,” she says. “It feels like a home and a kitchen.”
Relenda praises Yani for his help in creating a design plan and implementing their preconceived vision.
“Yani gave us options that would enhance and fit in with our vision. We had ideas, but he helped us alter and conform these into our space. He also explained things clearly so we could understand why something would or wouldn’t work within the confines of our design.”
Happy with all their design choices, she raves about her new sink that features one much deeper side for easier access and brushed aluminum faucet with the removable sprayer handle. “That was my husband’s choice.”
Recalling hosting a recent Thanksgiving dinner, Relenda was impressed with the wonders of having an abundance of space.
“It wasn’t claustrophobic at all. You can look straight back into the backyard, and the whole property just flows and looks so big now. The back of the house is open and glass and can be seen from the kitchen through to the laundry room. I just love it.”
Although she had heard stories about remodels, Relenda was pleasantly surprised through their process.
“Yani was so forth right, explaining everything so clearly. We did our research and understood the meaning of good ratings and qualifications and he was very honest and trustworthy.”
During the remodel she said they dined out a lot and they barbecued. They also moved out for eleven days to make it easier.
“It wasn’t bad at all. It seemed to go by very quickly.” When Yani said he would send someone out to check something or fix a problem, they were there and there quickly. “I was impressed that they showed up for work every day, always worked on the project and never said they won’t fix something, never once. That was a big plus. When they said they’d take of it, they did. They did their job and were helpful and polite.”
Although they still need to add some finishing touches and accents, they are enjoying their new space.
“The more I’m in the kitchen, the more comfortable I get. Both Larry and I enjoy cooking and entertaining so much more now and we try new recipes.
“He’s my guinea pig,” she laughs. “He has a couple of meals he likes to fix, but basically it’s a team effort. I never imagined I’d have something like this. I took pictures before and after I saw the transformation, I was so pleased.”

21st September, 2008 – Strawberry Fields Forever

The first job of the day ws to sterilise the jars and when cool enough to handle, they were filled with mincemeat.
It has to be said that if Dan had not eaten great spoonfulls of he mincemeat mixture each day when stirring it (in accordance to our recipe), then the 5th jar might have actually been full!
With the oven already hot from sterilising the jars, Tracey roasted 4 enormous courgettes, together with plenty of herbs and garlic – a good base for more pasta sauces in the winter.
With the mornings now starting out quite chilly, the basil plants are suffering as a result. Not wanting to waste an opportunity, Tracey picked all the leave from the 6 healthy plants and froze them in ice cube trays.
This will now provide use with an abundance of our favourite herb in the months to come.
The afternoon was all about teamwork.
Dan collected 116 runners from the strawberry plants and Tracey filled 116 pots with compost.
Dan cut the runners ready for potting and Tracey then potted them before watering.
It has to be said that, by his own admission, Dan prefers to work on his own (there’s a long story behind this, it’s not that he’s totally pig-headed!!!), but this afternoon, even he had to admit that the job was done a lot quicker and more effectively with 2 pairs of hands working in tandem.
With 60 strawberry plants already in the ground and providing us with sumptuous berries, another 116 plants will mean that next year we should be able to make our own strawberry ice cream!
